Here are a few photos of some of our dinners last week. I couldn’t capture every meal since at times I was just too hungry to snap a photo. What’s missing is a sautéed salmon over Jasmine rice dinner. We try to have fish at least once a week. We try to have a salad, preferably Greek, a few times per week also. I guess the best way to describe our meals (other than cost-effective) is that we follow The Mediterranean Diet. We’ve been eating this way for years. Lots of olive oil. Lots of veggies and occasionally some fresh fruits (more so in the summer).
We try to set up a system: Friday night is pizza night (yes, we make it completely from scratch, including the dough). Monday is meatless/vegetarian. Sunday is family-styled pasta day.

Hi Penny. I can do better. I can show you. I made this YouTube video a while ago. It cost me around $2 then to make a home made pizza. Today? The cost is probably $3. Still a good deal! Here’s the link:
