Sunday Is My Fun Day

I’ve decided to not boot up my computer on Sunday’s anymore nor have anything to do with social media for the day either. Let’s face it. We all really do need a day off from like everything!  No news shows. No talk shows. No worries. Just a day to simply, well, enjoy the day!

DH and I got up early Sunday morning and shopped some sales. We wanted to do it early enough in the morning since we’re going through a brutal heatwave up here in the north east lately. By 10:30AM, we were done!

The main thing we wanted to pick up was cut up, local BBQ-quality chicken a gourmet-like grocery store was selling for only $1.49 a pound. Each package contained 4 thighs, 4 legs and 4 split breasts. We bought two packs which should last us till the next time they have this sale (they have it systematically).

Lately, DH and I have been having a hankering for some southern fried chicken. Don’t ask me how this desire came about because neither one of us have ever cooked fried chicken in our lives nor do we eat such a thing. It’s gotta be from the Cracker Barrel commercials we’ve been bombarded with. Rather than go out to the restaurant and pay $12.99 each for the southern fried chicken meal, we decided to try our hand at making the specialty dish ourselves.

Here’s a link (click here) to a copy cat Cracker Barrel recipe for their southern fried chciken, which we followed somewhat. We didn’t dip our chicken in the flour mixture twice as the recipe suggests. Only once. Regardless, the chicken came out terrific and we only spent $5 vs $25 if we had gone out to eat at the restaurant. We fried up 4 legs and 4 thighs and froze the 4 chicken breasts for another time.
You MUST fry chicken in a cast iron pan!

Anyway, it was a lovely day off from the outside world. I highly recommend you do it. Turn off the noise. I didn’t even boot up my computer. We spent the rest of the day listening to some great music on Spotify and cooking up a storm. Southern Style.

  1. I let go of the structure of one specific day for fun. It’s my main goal for everyday! Work around the house a maximum of three hours on a household project is probably the only rule I maintain because too many other activities to enjoy. Sincerely Lara
